Here’s what you do for your Weber charcoal grill: Close 2 of the 3 bottom vents. Build one pile of 45 to 50 briquettes over the opened vent. Ignite and burn 25 to 30 minutes, until coals are covered with a light coating of gray ash.
Drain wood chips. Place a large 2-inch-deep disposable foil drip pan on opposite side of coals on bottom grate. Fill pan halfway up with water (for steam inside the kettle). Place 1 cup of chips over hot coals. Replace top cooking grate.
Place meat over drip pan and close lid with opening over meat. Grill pork 3-4 hours. Replenish briquettes and wood chips as needed every 1 to 1-1/2 hours to maintain a temperature inside the grill of about 225 degrees F to 250 degrees F.
Regardless of what style of smoker you use, you will need to have a good quality thermometer that can read the inside temperature of the unit. Any good smoker will come with such a thermometer. You may have to retrofit an existing grill, but it it’s absolutely necessary to keep a consistent, even and low heat environment inside your smoker.
Here's what you need to smoke your pork butt over a Weber charcoal grill:
• 1 bone-in pork roast, preferably fresh or picnic ham, 6 to 8 pounds
• ¾ cup dry rub
• 4-6 (3-inch) wood chunks and/or 4 cups wood chips
• One bag of quality charcoal briquettes
• Heavy-duty aluminum foil
• Two roasting pan (about 8 by 10 inches)
• Brown paper grocery bag
• 2 cups barbecue sauce, homemade or in a pinch - Bull's-Eye brand original flavor is mighty tasty.
At least 1 hour prior to cooking, remove the meat from the refrigerator, unwrap, and let come to room temperature. Soak the wood chunks in cold water to cover for at least 1 hour and drain. Place the wood chips on an 18-inch square of aluminum foil, seal to make a packet, and use a fork to create about 6 holes to allow smoke to escape or if you have one of those small cast iron wood chip boxes, use that.
Meanwhile, light a large chimney filled a bit less than halfway with charcoal briquettes (about 2½ pounds or 40 coals) and allow to burn until covered with a thin layer of ash. Empty the coals into one side of the grill, piling them into a mound two or three briquettes high. Keep the bottom vents completely open. Place the wood chunks or the packet with the chips on top of the charcoal.
Set the unwrapped roast in the disposable pan and place it on the grate opposite the fire. Open the grill lid vents three-quarters of the way and cover, turning the lid so the vents are opposite the wood chunks or chips to draw smoke through the grill. Cook, adding about 8 briquettes every hour or so to maintain an average temperature of 225-275 degrees, for 3 hours. When the meat is done (it should reach 160 degrees F. on a meat thermometer). Now it is time to move into the kitchen to finish the process.
Adjust an oven rack to the middle position and preheated 325 F. degrees oven. Wrap the pan holding the roast with heavy-duty foil to cover completely and seal the edges. Place the pan in the oven and bake until meat is fork-tender, about 2 hours. So yes, you are 5 hours into just the cooking portion of the preparation. Clearly, this is epitome of the slow food movement.
Next, slide the foil-wrapped pan with the roast into a brown paper bag. Crimp the top shut. Let the roast rest for 1 hour. Don't be tempted to skip the final rest in a paper bag. This makes all the difference if you want really tender pork.
Transfer the roast to a cutting board and unwrap. When the pork is cool enough to handle, pull the roasts into strips with your hands removing the fat, if desired. Pull each strip into think strips about 1 ½ inches thick. Chop the strips into small pieces about ¼ inch wide and place in a large bowl. Place the shredded meat into a large bowl. At this point, the pulled pork can be sauced and served immediately or can be covered and put into the refrigerator, sans sauce - for a day or two… if you can wait that long.

What do you do to ensure you light your charcoal grill just right?
Just graduated from college and this is my first time bar-b-q'ing without my buddies, and usually it was me and another drunk guy at a party.
But now? I actually want to know what everybody does to ensure they light their charcoal grill properly so that it catches and keeps going.
So happy that you graduated...that is a great feat..so now to the fire..LOL
What you need is a hose for putting out a fire or a fire extinguisher.
Then a large amount of charcoal....if you can find a tall tall pitcher shape metal container they make them just for starting these coal fires....anyhow
you fill it with the coals and place a little paper underneath it....to get it going...and start it early enough so it has time to turn white ash color before you start cooking the food....
When the coals are ready then remove them from the metal pitcher can and move them to the rear of the grill and the meat is cooked over the rear section on the wire rack.
then as it goes to the last stages of cooking you move it forward so it gets residual heat and finishes cooking. It's best to have a meat thermometer to check for the right temperature of doneness because you want chicken and pork to be just right...and also burgers...but wash the thermometer tip between different meats so you don't cross contaminate.
when the meat is done place it on the highest rack..pile it up to keep it warm....or remove and place in aluminum foil..until all the cooking is done...don't sauce anything until the LAST 15 MINUTES...or you will have burnt food due to the tomato /sugar content...of the sauce...the only sauce you can use without worrying about burning...is this:
1/2 cup apple cider vinegar
1/2 cup water
2 teaspoon salt
1 teaspoon black pepper ground
your favorite oil....1/3 cup like Canola
You can use this for a starter marinate for chicken and pork...and use it for basting also.
Pour this mixture over the meat then add any other seasonings you like according to what ethnic foods you like..for example:
Italians use...oregano, rosemary, basil and garlic plus olive oil to moisten to meat...and helps it brown squirt of lemon juice too...Greeks also use these spices..
Mexicans use....oregano, cumin seed, garlic and lime juice instead of the vinegar...
The night before or the morning of the party get your main meat dishes all prepared with the seasonings. Keep very cold in the refrigerator...then when it's time to grill remove the meat about 20 minutes before so it has time to heat up some..but don't let it sit out any longer....put it right on the grill....the longer the seasonings stay on the meat like overnight or during the day...the meat will have more flavor...
Paprika spice is a great addition to the meats to give it more of a reddish brown coloring for chicken especially any white meat...
Just before your meats are ready to eat remove the side dishes from the refrigerator to the serving table...such as a veggie tray...bread and butter or cream cheese dips...and spreads...pickles and olives...potato salads or macaroni salads or deviled eggs...these dishes are best kept on ice if you have a long metal baking pan fill with ice then place the cold foods containers on the ice.. you must be concerned all the time about food safety these days when using egg products..like mayo based foods.
Have chips, pretzels, salted nuts...and a tray with mixed fruit like grapes...and whole fruits apples and any fruit in season..for eating (and it serves as decoration).. ...out for your guests to nibble on while you are sweating over the grill.
for dessert...you can also use the grill....by grilling fruit...and serving with ice cream....like fresh pineapple rings....peaches...bananas.....they have natural sugar so turn them carefully...it only takes a couple minutes for them to grill. have your utensils ready....
Use different tools for each type food you are serving if you stick a fork in the chicken don't use the same one for other foods...
Well enough from this Mama Motor mouth I hope there is something here you can use for your grilling ....don't grill and drink ...it's like drinking and driving..someone must be in charge....so you have good results...or save the drinking for after you cook!

OK I'm confused ! Bought a new gas grill...it has a"smartbar" heat distribution system and in one of the
directions it say's do not use lava rocks, ceramic briquettes or charcoal? Then when you read the users manual it say's ....If you are using lava rock make sure it does not get used wet or it will cause it to crack?
So should I or shouldn't I use lava rock and if not will I still get the same great char-broiled taste to my food ?
my grill has those and I do not use lava rocks. the bars help distribute the heat to get a uniform cooking surface. the juices drip down on them and you get the same grilled flavor as you would with any other type of grill.

I have a few questions about my pet slug.?
I want to make a home for my three pet slugs and their approx. 60 eggs they have just laid in an aquarium. I read on a web site that you should put down a layer of activated charcoal before placing gravel/rocks and then dirt b/c the charcoal absorbs odor. I cannot find activated charcoal anywhere. What else could I use? Would kitty litter be safe? Thanks!
I heard that chopped potatoes absorbs odor. I tried once and it works. You could cut a potato in 4ths and put it around. Also if it stinks boil vineger and the smell disappears.
It sounds weird but it works so you can try if you would like to.
