What does "grilled over hardwood" mean?
I have been trying to decipher this steak recipe from a restaurant called Houston's. It is the JUICIEST steak I have ever eaten, yet it is grilled and has crispy grill marks and bits. The menu description says that it is "Marinated then grilled over hardwood".... does that mean they grilled it over wood chips/chunks, or does it mean they used a wooden plank (which helps retain juices)?
If it means that they use a wooden plank, how exactly would it cook the steak with the grill marks if it's not directly on the grill?
Based on what you wrote: I would think it is the hardwood chips in the barbie. Marinated meat will maintain more juices, than not marinating. A wood plank cooked steak is just that. The wood is soaked in water, or thinned juice and the steak is cooked on that plank. The steak can be layed on the grill to show the grill marks for both sides but mostly cooked on the plank.
